Ingredients
  1. ½ cup extra virgin olive oil
  2. 1 small onion chopped
  3. 2 cloves of garlic chopped
  4. 1 stalk of celery chopped
  5. 1 carrot chopped
  6. 2 32oz cans of crushed tomatoes
  7. 4 to 6 basil leaves
  8. 2 dried bay leaves
  9. Sea salt and fresh ground pepper
  10. 4 tablespoons of unsalted butter
Instructions
  1. In a large casserole pot, heat oil over medium-high heat. Add onion, garlic and sauté for 2 minutes. Add celery, carrot and season with salt and pepper. Saute until vegetables are soft, about 5 minutes. Add tomatoes basil and bay leaves and reduce heat to low. Cover the pot and let cook for about an hour or until thick. Remove bay leaves and season to taste. If sauce tastes too acidic, add sugar a tablespoon at a time, to round out the flavor.
  2. Pour half the tomato sauce into the bowl of a food processor and process until smooth, continue with the remaining sauce. If not using all the sauce allow to cool completely and then pour into 1 to 2 cup plastic containers and freeze for up to 6 months.
