Pork Tenderloin (in a soy sherry marinade)

Ingredients
- · 2 inch piece of fresh ginger, sliced
- · 6 cloves of garlic
- · ½ cup of dry sherry
- · 2 tablespoons of reduced-sodium soy sauce
- · 1 tablespoon of canola oil
- · 1 ¼ pound pork tenderloin, trimmed of fat
- · 4 scallions, thinly sliced
- · Salt and ground black pepper to taste
Instructions
- · In a food processor, combine the ginger and garlic, PULSE until coarsely chopped. Add sherry, soy and oil. PULSE to just combine
- · In a large Ziploc bag place the pork tenderloin, scallions. Add the marinade and turn until pork is fully coated. SEAL bag and refrigerate for at least 1 hour and up to eight hours.
- · Heat gas grill to medium high heat or prepare charcoal fire.
- · Remove the tenderloin from the bag leaving as much seasoning as possible on the meat. Add salt and pepper
- · Oil the grill and grill tenderloin until just cooked through, turning several times; an instance-read thermometer should read 155F at center. About 15 to 20 minutes.
- · Transfer tenderloin to cutting board and cover with foil for about 5 minutes. Carve crosswise into ½ inch thick slices and serve.
