Ingredients
  1. · 2 inch piece of fresh ginger, sliced
  2. · 6 cloves of garlic
  3. · ½ cup of dry sherry
  4. · 2 tablespoons of reduced-sodium soy sauce
  5. · 1 tablespoon of canola oil
  6. · 1 ¼ pound pork tenderloin, trimmed of fat
  7. · 4 scallions, thinly sliced
  8. · Salt and ground black pepper to taste
Instructions
  1. · In a food processor, combine the ginger and garlic, PULSE until coarsely chopped. Add sherry, soy and oil. PULSE to just combine
  2. · In a large Ziploc bag place the pork tenderloin, scallions. Add the marinade and turn until pork is fully coated. SEAL bag and refrigerate for at least 1 hour and up to eight hours.
  3. · Heat gas grill to medium high heat or prepare charcoal fire.
  4. · Remove the tenderloin from the bag leaving as much seasoning as possible on the meat. Add salt and pepper
  5. · Oil the grill and grill tenderloin until just cooked through, turning several times; an instance-read thermometer should read 155F at center. About 15 to 20 minutes.
  6. · Transfer tenderloin to cutting board and cover with foil for about 5 minutes. Carve crosswise into ½ inch thick slices and serve.
